Kickin’ Cajun Jambalaya
Sure you can go to your local grocery store and get a box of Zatarains, add some meat to it and call it a day, but nothing ever tastes as good as a made from scratch Jambalaya.
So whenever you're looking to liven up a weeknight meal, you can't go wrong with this Cajun-seasoned stew!
Ingredients
- 1 Large Onion, chopped
- 14 1/2 oz Stewed Tomatoes
- 2 Ribs Celery
- 1 Green Pepper, seeded and chopped
- 1 Sweet Red Pepper, seeded and chopped
- 1 cup Vegetable Broth
- 8 oz Tomato Sauce
- 3 Cloves Garlic, chopped
- 10 oz Corn
- 1/2 Polish Sausage, cut into 1/2-inch pieces
- 6 1/2 oz Chopped Clams
- 1/2 Lb cooked, shelled and deveined small shrimp
- 15 1/2 oz Red Kidney Beans, drained
- 1 1/2 tsp Cajun Seasoning
- 1/2 tsp Salt
- 1 1/2 cups Instant Brown Rice
- 3 Scallions, trimmed and sliced
Directions
- In a large nonstick pot, heat 1 tbsp vegetable oil over medium-high heat. Add onion, celery, peppers, garlic, and sausage. Saute for 10 minutes, stirring occasionally.
- Add corn, clams, beans, tomatoes, broth, tomato sauce, Cajun seasoning, and salt.
- Bring to a boil. Lower heat and simmer, covered, for 10 more minutes, stirring occasionally.
- Turn off heat and stir in shrimp.
- Let stand about 5 minutes until heated through.
- Serve with cooked brown rice; top with scallions.
Turn Up The Heat
If you're anything like me and enjoy your food to be nice and spicy, you can substitute the green pepper for 2 habaneros or 2 jalapeno peppers.
