Authentic Jamaican Jerk Chicken
The official day of Summer is quickly approaching and whether you can take that long vacation you've been looking forward to, or you're staying at home for the summer, this recipe for Jamaican Jerk Chicken will let you bring a little of the caribbean home.
This Jerk Chicken recipe is authentic and was acquired from a local when I visited Jamaica.
Ingredients:
- 1 lb Chicken
- 1 Whole Garlic (Chopped)
- 6 Scotch Bonnet Pepper (Chopped)
- 3 Onions (Chopped)
- 2 Tbsp Thyme
- 2 Tbsp Salt
- 2 Tbsp All Spice
- 2 Tbsp Sugar
- 2 Tsp Black Pepper
- 1 Cup Orange Juice
- 1 Cup Vinegar
- 1/2 Cup Soy Sauce
- 1/2 Cup Olive Oil
- Juice of 1 Lime
Directions:
- Blend together all ingredients except chicken.
- Soak chicken in mixture for at least 2 hours (24 hours is best).
- Coat bottom of a large baking dish with Jerk Marinade.
- Add chicken to pan, coating well in Marinade.
- Bake at 250 degrees until chicken is done throughout and juices run clear, making sure to rotate halfway.
